In this video, Nikonya shows how to cook Miss Margaret's Down East Southern Corn Fritters. Her mother, known as Miss Margaret Jones down in Robeson County, is a remarkable cook, and a truly sweet human being (a big blessing in my life). She shared her way of making hoecakes, or corn fritters with Nikki, and then we tried to cook them her way. We forgot to add salt as she had specified, so be sure to add a bit of sodium to the ingredients as you mix it all up. These are great with collards, beans, fried or boiled cabbage, beef stew, and many more southern staples. At some point in the future, we're going to try to get Miss Margaret to let us shoot some cooking videos, and show her in action. She's awesome!
